Ingredients:

For the Cake:                                        

  • 250ml sunflower oil
  • 3 large eggs
  • 3 tbsp coconut or Greek yogurt
  • 250g light soft brown sugar
  • 1 orange zest
  • 2 tsp vanilla extract
  • 3 tbsp maple syrup
  • 300g grated carrots
  • 275g self-raising flour
  • 1 1/2 tsp bicarbonatee soda
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp nutmeg
  • 100g chopped nuts
  • 100g chopped dates (or raisins)
  • 1 tbsp peanut butter (optional)
  • Pinch of salt

For the Cream Cheese Frosting:

  • 700g icing sugar
  • 125g cream cheese
  • 100g softened butter

Instructions:

1. Prepare the Oven and Pans:

  • Preheat your oven to 175°C (350°F).
  • Grease and line two 8-inch round cake pans with parchment paper.

2. Make the Cake Batter:

  • In a large mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger and salt.
  • In a separate bowl, beat the eggs with the brown sugar until light and fluffy. Add the sunflower oil, maple syrup and vanilla extract, and mix well.
  • Gradually add the dry ingredients into the wet ingredients and stir until just combined.
  • Fold in the grated carrots, walnuts, pecans, dates, and raisins (if using).

3. Bake the Cake:

  • Divide the batter evenly between the two prepared cake pans.
  • Bake for 30-35 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

4. Make the Cream Cheese Frosting:

  • In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
  • Gradually add the sifted powdered sugar, beating until the frosting is light and fluffy.
  • Stir in the vanilla extract.

5. Assemble the Cake:

  • Once the cakes have cooled, spread a layer of cream cheese frosting on top of one cake layer.
  • Place the second layer on top and frost the entire cake with the remaining cream cheese frosting.

6. Serve and Enjoy:

  • Slice the cake into generous pieces and enjoy! It pairs wonderfully with a cup of coffee or tea.
