Oatmeal Chia Energy Bars (Dairy-Free & Vegan)
These no-bake energy bars are packed with fiber, healthy fats, and plant-based protein, making them an ideal snack for those on the go.
Ingredients:
- 200g rolled oats (gluten-free if needed)
- 30g chia seeds
- 60g almond butter
- 40g maple syrup or agave nectar
- 60g unsweetened almond milk
- 5ml vanilla extract
- A pinch of sea salt
Instructions:
- In a large bowl, combine the oats, chia seeds, and salt.
- In a separate bowl, whisk together the almond butter, maple syrup, almond milk, and vanilla.
- Pour the wet ingredients over the dry ingredients and stir until well combined.
- Press the mixture into a lined 8x8 inch baking pan.
- Refrigerate for at least 2 hours to set before cutting into bars.
- Store in the refrigerator for up to a week.
