 Oatmeal Chia Energy Bars (Dairy-Free & Vegan)

These no-bake energy bars are packed with fiber, healthy fats, and plant-based protein, making them an ideal snack for those on the go.

Ingredients:

  • 200g rolled oats (gluten-free if needed)
  • 30g chia seeds
  • 60g almond butter
  • 40g maple syrup or agave nectar
  • 60g unsweetened almond milk
  • 5ml vanilla extract
  • A pinch of sea salt

Instructions:

  1. In a large bowl, combine the oats, chia seeds, and salt.
  2. In a separate bowl, whisk together the almond butter, maple syrup, almond milk, and vanilla.
  3. Pour the wet ingredients over the dry ingredients and stir until well combined.
  4. Press the mixture into a lined 8x8 inch baking pan.
  5. Refrigerate for at least 2 hours to set before cutting into bars.
  6. Store in the refrigerator for up to a week.
